Ingredients:
- 1 cup long-grain white rice
- 1/2 cup thin vermicelli, broken into small pieces
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped carrot
- 2 cloves garlic, minced
- 2 1/2 cups chicken or vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
Put the pressure cooker on "saut" and melt the butter with the olive oil
Break up the vermicelli and add the rice
Stir the mixture often until it turns golden brown
Put in garlic, onions, celery, and carrots
Cook the vegetables in oil until they are soft
Add the broth, thyme, parsley, garlic powder, salt, and pepper
Mix well
Put the pressure cooker on high pressure for 5 minutes with the lid on tight
