Ingredients:
- 2 lbs ripe tomatoes, halved
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 4 cups vegetable broth
- 1/2 cup heavy cream
- Fresh basil leaves for garnish
Instructions:
Get the oven ready by heating it up to 400F 200C
Put tomato halves cut side up on a baking sheet
Put minced garlic and chopped onion on top of the tomatoes
Put olive oil on the garlic, onions, and tomatoes
Add dried thyme, salt, and pepper to taste
Put the tomatoes in the oven and roast them for 45 minutes, or until they are soft and caramelized
Put roasted garlic, onions, and tomatoes in a blender
Mix until it's smooth
Put the mixed ingredients into a pot
Set the pot on medium-low heat and add the vegetable broth
Add the heavy cream and stir it in
Let it cook for another 10 minutes
If you need to, change the seasoning
Add fresh basil leaves on top and serve hot
