Baked French Toast Muffins



These Baked French Toast Muffins are a delightful twist on classic French toast. They're perfect for a weekend brunch or a quick and easy breakfast. The individual muffin servings make them great for on-the-go as well.

Ingredients:

  • 6 slices of bread, cut into cubes
  • 3 eggs
  • 1 cup milk
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 cup melted butter
  • 1/4 cup maple syrup

Instructions:

Preheat your oven to 350F 175C and grease a muffin tin

In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt

Add the bread cubes to the egg mixture and gently toss to coat them evenly

Let it sit for about 10 minutes to allow the bread to soak up the liquid

Spoon the soaked bread cubes into the prepared muffin tin, filling each cup about 2/3 full

Drizzle melted butter and maple syrup evenly over each muffin cup

Bake in the preheated oven for 20-25 minutes, or until the muffins are set and the tops are golden brown

Remove from the oven and let them cool for a few minutes before serving
