This vegan dessert is called a Lemon Berry Cheezecake Parfait. It has layers of cashew cheesecake, mixed berries, and granola. This is a great treat for something light and cool!
Ingredients:
- 1 cup raw cashews, soaked overnight
- 1/4 cup coconut cream
- 3 tablespoons lemon juice
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- 1 cup mixed berries such as strawberries, blueberries, raspberries
- 1/2 cup granola vegan
- Fresh mint leaves, for garnish
Instructions:
Put the cashews that have been soaked, coconut cream, lemon juice, maple syrup, and vanilla extract in a blender
Mix until it's creamy and smooth
Start with a layer of cashew cream at the bottom of a serving glass and work your way up to the mixed berries and granola
Put another layer of cashew cream on top to finish and repeat the layers until the glasses are full
Add some fresh mint leaves as a garnish
Put it in the fridge for at least 30 minutes before you serve it
