Butterscotch Cupcakes by Lydia Bakes



These Butterscotch Cupcakes by Lydia Bakes are a delightful treat that combines the rich flavor of butterscotch with the moistness of a classic cupcake. Perfect for any occasion!

Ingredients:

  • 1 and 1/2 cups all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup butterscotch chips
  • 1/2 cup whole milk

Instructions:

Preheat your oven to 350F 175C and line a cupcake tin with cupcake liners

In a bowl, whisk together the flour, baking powder, and salt

Set aside

In another bowl, cream together the softened butter and brown sugar until light and fluffy

Add the eggs one at a time, beating well after each addition

Stir in the vanilla extract

Gradually add the dry ingredients mixture to the wet ingredients, alternating with the whole milk, beginning and ending with the dry ingredients

Mix until just combined

Fold in the butterscotch chips

Fill each cupcake liner about 2/3 full with the batter

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean

Allow the cupcakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely

Once cooled, you can frost the cupcakes with your favorite butterscotch frosting or toppings
